From my home to yours:

Moroccan Spiced Mahi Mahi with a Chermoula Sauce over a Citrus Cous Cous. This paired extraordinarily with the 2012 Napa Valley Sauv Blanc from Envy Wines although I would have preffered to let this bottle mature and really open it's full flavor for about a year or so but "when you're in a pinch you've gotta pop" ...the cork! This was one of the many bottles we picked up in Napa a week ago, what an excellent hidden treasure.
This recipe was from Cooking for Two summer 2013 issue otherwise I would love to share the recipe. I recommend going out and purchasing this one because it has some beautifully scrumptious dishes in it!
Using a Smoker and this Weber's Guide to Smoke Cooking proved delicious last weekend at my in laws house in Palm Springs. My husband and father in law spent a few hours babysitting some poultry while poolside. This particular chicken was prepared with a mesquite rub in beer butt style ala Guinness. I don't know that I can properly articulate how exquisitely moist and satisfying this was but I'm salivating just reliving it in my head. We definitely endorse this cookbook to explain proper temps, times and techniques!
To fit in a quick BBQ after the beach but before the Fish Fest concert we had a Grilled Wedge Salad with Avacado Lemon dressing and Asian Shrimp, Corn and Black Beans. I love when a plate has lots of color!
